Matzah Meal Kobabas
Recipes from the mothers and aunts in the family.
Ingredients:
Recipe #1:
2 c. matzah meal (matzah flour)
1 tsp. salt
1 tsp. pepper
2 medium-sized potatoes (mashed potatoes)
3 eggs beaten
1 c. room-temperature tap water
Recipe #2:
½ kg. (about 1 lb.) matzah meal (matzah flour)
1 tsp. salt
black pepper
3 Tbsp. oil
1-2 c. room-temperature tap water (add gradually as needed)
Preparation:
Mix matzah meal with other ingredients in a bowl and mix together to form an elastic dough which isn’t stick (add water if needed).
Set aside to “breathe” ½ hour.
Lightly oil a plate and dip the hands.
Take a piece of dough in the left hand and using the right hand, create an indentation.
Work the dough into long, cone-shaped dumplings of medium thickness, and not too thin.
Fill with 1 tsp. filling and seal the end closed well between the hands.
Work the dough into a cone shape.
Deep-fry and serve with lemon wedges, tehini and hamanidos.
